Blending Ideas
Assam is compatible with any spice on our lineup, with hints of nutmeg already present in the tea itself. Assam also brews well with fruits (apart from cranberry), and flowers (other than chamomile). Citrusy flavors also work (orange, lemon balm/grass) and rooibos. Some herbs are worth skipping (e.g. tulsi, hibiscus).
Story
There are two major varieties of tea, camellia sinensis var. sinensis and camellia sinensis var. assamica. The assamica variety is used throughout India, Kenya, and Sri Lanka and is local to the Assam region of India. The first attempts to grow the Chinese/East Asian variety (camellia sinensis var. sinensis) failed in the early 1800s. Through major tea investments from the British, plantations discovered that the local tea variety grew best in Assam’s soil. Assam today is the largest tea-producing region in the world, specializing in teas sold as breakfast blends and as the base for chai. Assam’s teas are bold, thick, and spicy.
