Ceylon performs best with citrusy flavors (orange, lemongrass) but also works well with most fruits (apart from cranberry or flavors that are overly tart like hibiscus). Ceylon would also blend well with our spices and rose.
Story
Ceylon, the British colonial name for Sri Lanka, benefitted from tea investment like many other areas in South Asia in the early 1800s. A century later, Sri Lanka would become the world's largest tea exporter and is now currently ranked as the world’s fourth-largest tea producer and the second-largest exporter (behind China). Known for its cooler climate and heavy rainfall, Sri Lanka has great growing conditions for tea. The province of Uva, where this tea originates, has very high elevation, with most of its tea plantations located above 4000 feet. Higher elevation teas are usually higher quality since the thinner air slows down the growth of the plant, packing more nutrients into the tea.
