Like other white teas, it is best not to overpower. Avoid mints and citrus (apart from lemon balm which works well) and lean into flowers and subtle flavors like rose hips and turmeric.

Story

Kumaon is an administrative region in India's northern state of Uttarakhand. Much like the history of Assam and Darjeeling teas, Kumaon was heavily invested in by the British as they tried to overcome their tea dependency on China in the early 1800s. Unique to this region, the tea plants that grow best here originate from China and not the Assam region like most South Asian teas. Kumaon has overcome significant barriers in becoming a successful tea-producing area, mainly the ceasing of investments early on from the British who faced logistical issues getting the tea to port. Many of the Kumaon tea plants were sitting in a wild state for almost a century until the 1920s when more investments from a group of British-sri Lankan families reinvigorated the area. Again, however, tea production quickly failed and the tea plants grew wild until the 1990s when local investments brought the area up to its current state.
