Sencha can be a fussy tea to blend with and is not recommended for beginners. Avoid spices, chamomile, tulsi, rooibos. Tart flavors (cranberry, hibiscus) should be used in moderation. Sencha works with most flowers, fruits, lemon flavors (lemongrass and balm) and small amounts of mint.
Story
Sencha is the most popular tea in Japan and like their culture itself, it is unique and pragmatic. It is processed in a distinct, standardized way with many different machine-powered steps (including machine picking). It is pragmatic in that the function of Sencha, along with many other Japanese teas, is to deliver an “umami hit” which is a unique savory flavor that makes your mouth water. The better the Sencha, the greater the umami flavor.
