Story
The name of this tea describes the tea type and processing. Houji, short for Hōjicha, is a type of processing for green teas where they are fired at very high temperatures to avoid full oxidation. This in turn produces a toasted flavor. Unlike most Japanese green teas, Hōjicha is not steamed. Kukicha is a tea made primarily from the twigs of the tea plant. Both of these elements make the tea lower in caffeine. In Japan, Hōjicha is enjoyed after meals and in the evening. Due to its low caffeine content, it is also a favorite of the elderly and children.
